Fruity and Frozen Tropical Treats
Another one of our inspirations this June was the beautiful colors of tropical cocktails….

We loved the layers of bright oranges, yellows and reds. In honor of this, last weekend I whipped up a more family-friendly version of a tropical treat: mango-lime-strawberry popsicles. Popsicles are the big craze here in NYC, with LaNewYorkina and People’s Pops leading the way with unusual flavors like raspberry basil and mango-chili.

But making your own tropical treat is easy. Here’s how to make your own Mango-Lime-Strawberry pops:
All you need is a blender/food processor and some popsicle molds. Even ice cube trays would work.
Ingredients: about 2 cups of diced mango, 3-4 tablespoons of lime juice (fresh is best, but as you can see below, I didn’t have any limes), 2-3 tablespoons of sugar, depending on how tart you like things, 1-1/2 cups frozen or fresh strawberries.
First make the strawberry pulp. Toss your strawberries and 1 T sugar into the blender. Add a little water (1T) if needed- you want to be able to pour the mixture into the mold. Pour a bit of the strawberry pulp into each of the molds. Rinse out your blender/processer bowl.
Next, make the mango pulp. Toss mango, lime juice and 2 T sugar into the blender and puree it! Gently spoon this into each of the molds until they are full. If you don’t care about them looking perfect, you can just pour it in- it will look a bit swirly.
Freeze for 3-4 hours or until firm. Run mold under warm water to help release the pops. I can’t even begin to tell you how good these were!
